How to simply spice up your veggies for dinner

  • One of my favorite ways to prepare vegetables are with coconut oil and spices. The base is literally mainly onion, ginger, spices and coconut oil - and then I mix in whatever veggies I have in the fridge. It aaalways ends up so tasty! Lately I have used some celery in the base as well.

     

     

    For the base sauce I always use:

    - 0.5 - 1 onion 
    - 1 can of coconutmilk 
    - 1-2 tbsp of green curry paste (you can also use red)
    - Spices: Garam masala, koriander, garlic, pepper & ionized salt 

     

    For the main ingredient I only used 5 ingredients that I think everyone should always have - weather on a plantbased diet or not. This meal is my funny way to use the lefties that is dying in my kitchen. Thats why I think this dish is so much fun cause the most boring fridge can turn out so great with just some coconut milk and spices. Yummy nommy. The ingredients I used this time was:
    - 1 broccoli
    - 1 cauliflower
    - 4-5 carrots
    - 1 can of white beans
    - 5 potatoes 

     

     

    I cooked everything but the beans before mixing it into the sauce mix together with drained beans - leaving it all together for approximately 5-10 minutes to absorb all the flavors. If you try it out please let me know - hopefully you will enjoy it as much as I do on a daily basis <3
